Salmon Coco Ribe

Serves 4
2-4 Salmon steaks
1/3 C chutney
fresh mango sliced (or fresh apricots)
Sauce:
2 eggs
1 T water
salt & pepper
1/3 C orange juice
1/3 C pecans ( chopped)
1/3 C coconut flakes
Combine ingredients for sauce and mix well.
Place salmon steaks in baking dish
Cover with sauce,
Top with chutney; add mango slices
Bake at 400 deg 30 mins.
