
Lucky in Truckee Trout

Serves 4 Make sauce before skiing for a fast supper
2 to 4 trout filets or 2 to 4 fat, whole trout
Sauce:
½ C mayonnaise
1 T Dijon mustard
2 T tomato salsa
1 T capers
1 shallot, chopped
¼ red bell pepper, chopped
16 stems fresh cilantro, chopped
Combine above ingredients and mix well.
Wash and dry trout, then
Bake at 400 deg 10 mins. (pan should be sprayed with nonstick spray.)
Squeeze lemon juice over trout.
Pour sauce over trout and return to hot oven.
Bake until sauce bubbles and fish flakes.
